Coconut Shrimp

Coconut shrimp made with Mavuno Harvest Dried Coconut


1 cup Mavuno Harvest organic dried coconut
1 cup panko bread crumbs
1 teaspoon paprika
1/2 teaspoon cayenne pepper
Salt, to taste
1 cup all-purpose flour
2 eggs, beaten
1 pound large shrimp, peeled and deveined

  1. In a shallow dish, mix together the coconut, bread crumbs, paprika, cayenne pepper, and salt.
  2. Place the flour in a separate shallow dish and the beaten eggs in a third shallow dish.
  3. Dip the shrimp in the flour, then the eggs, and then coat with the coconut mixture, pressing gently to help it adhere.
  4. Heat about 1 inch of vegetable oil in a large pan over medium-high heat. Once hot, add the shrimp in batches and fry until golden brown and cooked through, about 2-3 minutes per side.
  5. Remove the shrimp from the pan and drain on a paper towel-lined plate. Serve hot with your favorite dipping sauce, rice, lentils or noodles!
