1 cup Mavuno Harvest dried mango, diced
1/2 cup apple cider vinegar
1/2 cup sugar
1/2 cup water
1/2 teaspoon salt
1/2 teaspoon mustard seeds
1/2 teaspoon cumin seeds
1/4 teaspoon ground ginger
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cardamom
Pinch of cayenne pepper (optional)
In a medium saucepan, combine the diced dried mango, vinegar, sugar, water, salt, mustard seeds, cumin seeds, ginger, cinnamon, cardamom, and cayenne pepper (if using).
Bring the mixture to a boil over medium heat, stirring occasionally.
Reduce the heat to low and simmer the chutney for 30 minutes, or until thickened, stirring occasionally.
Remove the pan from the heat and let the chutney cool to room temperature.
Transfer the chutney to an airtight container and store in the refrigerator for up to 2 weeks.
Serve the mango chutney as a condiment with grilled meats, fish, or vegetables, or as a spread on sandwiches and wraps.
